Green Cardamom

Cardamom is known to be the second most expensive spice in the world after saffron. In India, the natural home of small and large cardamom is the evergreen forest of western ghats on the Malabar coast of south west India, hence this area is commonly known as the Cardamom Hills. Harvesting cardamom is a meticulous process that is typically done by hand. The spice must then move through dozens of steps before it finally ends up in markets and kitchens. The major producers of cardamom in India, Kerala is 70% and Tamil Nadu is 10%. Throughout the cropping season is from August to March. In most of the areas the peak period of crop is during October‐November.

Properties and benefits of Cardamom:
Cardamom is often used as a flavoring agent and comes under the category of aromatic plants. The small cardamom or choti elaichi is often used in ayurvedic medicines that enhance physical strength. The small green pod with black seeds contributes considerably to gastrointestinal protection, cholesterol control, relief from cardiovascular issues, and improvement of blood circulation in the body.

Culinary Uses:

Cardamom is used mainly in Indian cooking as well as Middle Eastern cuisine. In Indian recipes, whole cardamom pods are used in preparing basmati rice and various curries. In Middle Eastern recipes, ground cardamom is used in preparing certain desserts. Indian savouries and sweets are both flavoured with cardamom. This is used in rich, red curries and milk dessert. In India, tea and coffee are sometimes spiked with cardamom. Around the world, it is used in spiced cakes and bread for flavoring sweet treats like apple pies, chocolate-based recipes, or this delicious twisted cinnamon & cardamom loaf.
